(New) Raw Ka 2022 –  è una birra a fermentazione spontanea ispirata alle farmhouse scandinave, senza bollitura, con infuso di ginepro come base per il mosto e con malto affumicato da noi con legni raccolti nel bosco. Fermenta vicino ai 40 °C e matura in barrique per circa 18 mesi.
(New) Raw Ka Kentucky 2022 –  è una birra a fermentazione spontanea ispirata alle farmhouse scandinave, senza bollitura, con infuso di ginepro come base per il mosto e con malto affumicato da noi con legni raccolti nel bosco. Fermenta vicino ai 40 °C e matura in barrique per circa 18 mesi e prima dell’imbottigliamento facciamo una macerazione di foglie di tabacco toscano.
(New) Bruin More 2022 è una perpetua spontanea su base bruin, con malti caramellati e tostati. Dopo circa 2 anni di botte, con passaggi sia in botte grande che in barrique, si passa alla macerazione di more toscane fresche.
(New) Forte de Coupage 2023 è il blend tra una birra a fermentazione spontanea da coolship, maturata per circa 24 mesi in barrique, e una tripel fatta con lieviti selezionati e fermentata in acciaio. Dopo il blend è proseguita la maturazione in barrique per altri 9 mesi.
